What a mess!


Noah knocked the spoon off my hand when I feed him this morning. He has rice and sweet potato everywhere -- on his face, bib, pants and high chair. He thinks it's funny and started laughing! I was mad in the beginning but can't help to laugh with him too! Of course, that means I have to do laundry when he is taking afternoon nap!

Tulips!






We went to 公公婆婆's house today. 公公 planted a lot of tulips in the yards, them are blooming this week. Some of them as red as fire, some are orange and yellow. They are soooooo beautiful! It's shame that 公公 and 婆婆 were not home, so we took a lot of pictures for them!

Noah first time saw our neighbor's dog, he was not scared at all! After lunch, Noah and mommy took 3 hours nap--so Noah didn't go to bed until 10:30 PM tonight!

Snack Time!

Noah knows how to grab cereal and feed himself! After one week practicing, he is a master of "grabbing" now!

Rabbit cake and chocolate cake recipe




I baked 2 cakes for Easter last week and we all love the cakes. He and I can eat a whole cake by just ourselves! It's not easy to find a good "not so sweet" cake receipt and I would like to share them with you.


The rabbit/vanilla cake

Cake:
3 cups (470g) all purpose flour
2 tsp. baking powder
1 1/2 tsp. salt
16 tbs. (2 sticks) unsalted butler
2 cup (500g) granulated sugar (I use 1 1/2 cup, so it's not so sweet)
4 eggs, lightly beaten
1 1/3 cups (340ml) milk
1 1/2 tsp. Vanilla extract

Butter cream:
4 tbs. (1/2 stick) unsalted butter
1 1/2 cups confectioners sugar sifted
1 tbs. milk
1/2 tsp. vanilla extract
Pinch of salt

Beat butter and sugar until light and fluffy. Add eggs a little at a time. Beat well.
In a small bowl, combine the milk and vanilla. Add flour mixture in three additions, alternating with the milk mixture and beginning and ending with the flour.
Bake at 325 F (165 C) for 45 to 5 minutes.

I used chocolate as eyes and nose. Chocolate icing as eye lashes, mustache and ears.



Dark Chocolate Bundt

3/4 cup cocoa
1 3/4 cups hot water
2 3/4 cups flour
2 cups sugar (I used brown sugar)
1 cup shortening
1 1/2 tsp, baking soda
1 1/4 tsp. salt
1 1/4 tsp. vanilla
1/2 tsp baking powder
2 eggs plus 1 egg white

Combine cocoa and hot water, stir until cocoa is dissolved. Cool to room temperature.
In large bowl, combine remaining ingredients. Add cocoa mixture, beat on high speed 3 minutes. Bake at 350 F for 55 to 65 minutes.

Easter









What a fun Easter! All the family members got together and enjoyed this beautiful Sunday. Although it was a little cold outside but we still had a wonderful Easter egg hunting. Christopher had his cool sunglasses and Matthew just dig in his chocolate rabbit. JJ was so handsome in his suit. Noah was trying to figure out how to eat the lollipop! By the end he only got some sweet taste by chewing the end of the stick.

I made a rabbit cake and a chocolate star cake, Madeleine and Josephine poked the eye balls (chocolate) out of the rabbit cake and made it "blind"...

I loves my toys!




Noah's daily schedule is routine now. After first morning get up, he will have breakfast and watch morning news with Mommy. After 2 hours, he will take his morning nap. After that is his "happy hour" - half hour in the play room! 婆婆 bought him a music Penguin that he loves to push it around to make music. Also he loves the Sponge Bob Square Pants ball. Auntie Theresa bought him a play table has 15 music buttons and keys that is one of his favorites now.

We usually play another half hour and read some books later in the afternoon.
