Rabbit cake and chocolate cake recipe




I baked 2 cakes for Easter last week and we all love the cakes. He and I can eat a whole cake by just ourselves! It's not easy to find a good "not so sweet" cake receipt and I would like to share them with you.


The rabbit/vanilla cake

Cake:
3 cups (470g) all purpose flour
2 tsp. baking powder
1 1/2 tsp. salt
16 tbs. (2 sticks) unsalted butler
2 cup (500g) granulated sugar (I use 1 1/2 cup, so it's not so sweet)
4 eggs, lightly beaten
1 1/3 cups (340ml) milk
1 1/2 tsp. Vanilla extract

Butter cream:
4 tbs. (1/2 stick) unsalted butter
1 1/2 cups confectioners sugar sifted
1 tbs. milk
1/2 tsp. vanilla extract
Pinch of salt

Beat butter and sugar until light and fluffy. Add eggs a little at a time. Beat well.
In a small bowl, combine the milk and vanilla. Add flour mixture in three additions, alternating with the milk mixture and beginning and ending with the flour.
Bake at 325 F (165 C) for 45 to 5 minutes.

I used chocolate as eyes and nose. Chocolate icing as eye lashes, mustache and ears.



Dark Chocolate Bundt

3/4 cup cocoa
1 3/4 cups hot water
2 3/4 cups flour
2 cups sugar (I used brown sugar)
1 cup shortening
1 1/2 tsp, baking soda
1 1/4 tsp. salt
1 1/4 tsp. vanilla
1/2 tsp baking powder
2 eggs plus 1 egg white

Combine cocoa and hot water, stir until cocoa is dissolved. Cool to room temperature.
In large bowl, combine remaining ingredients. Add cocoa mixture, beat on high speed 3 minutes. Bake at 350 F for 55 to 65 minutes.
